Rustic Roasted Tomato Salsa

Rustic Roasted Tomato Salsa

Today I picked loads and loads of fresh, ripe vegetables from our garden. Tons of different kinds of tomatoes, hot peppers, and eggplants. I decided to make a big batch of salsa to use up some of the tomatoes and peppers. So, I chose to make the Rustic Roasted Tomato Salsa today. This is a salsa made with roasted tomatoes, peppers, and garlic. Then raw onion, cilantro, lime juice, and salt are added at the end. The recipe calls for canned fire roasted tomatoes, but it also mentions that you can use fresh tomatoes roasted under the broiler.

Welcome to my new project. I love new projects :-) I love working towards goals and challenging myself and well, we all know that I love cooking and that I LOVE Mexican food. It's my very favorite.

THE PROJECT:
I've decided to cook my way through Rick Bayless's cookbook, "Mexican Everyday". There are 98 recipes in this cookbook and I plan to prepare each and every one of them and share the results here with you. Want to join me on this journey? Great! You will have to purchase your own copy of the book as I will not be posting the recipes here on the blog. It's a great book and if you're at all a fan of Mexican food, you will be very pleased with this book.

You can purchase the book here.

So order your books and stay tuned...  I will be posting recipes here very soon!  This will be fun!
